Marinated Green Beans With Toasted Pine Nuts

This recipe is the perfect way to showcase the beans naturally sweet flavour and crunchy texture.
  • Green Beans
  • red wine vinegar
  • sugar
  • garlic cloves
  • pine nuts
  • olive oil

Blanche the beans in boiling water for around 4  minutes, or so they are just tender, but still a little bit crisp before cooling in ice water

once cool then drain the beans 
Slice a couple of garlic cloves into wafer thin slices 

in a bowl mix together 1 part red wine vinegar to 3 parts olive oil, until emulsified into a dressing, add sugar to taste.

dress the beans and garlic and leave in the fridge for a few hours.

toast the pine nuts in a frying pan for a couple of minutes.

once toasted, cool down and finish the beans with the toasted pine nuts.
