Candied Lemon Slice

Here is a simple recipe to create a lovely garnish for a dessert 
  • Handful of IQF Lemon slices
  • 500ml water
  • 500g caster sugar
  • 1 vanilla pod split
  • 1/4 teaspoon salt
  • Sheet of greaseproof pape

In a saucepan combine the sugar, water, and salt together.

Bring this up to a simmer then add the vanilla pod

Add the lemon slices and simmer gently until the rind goes slightly translucent but not falling apart (usually around 5 mins, depending on the thickness)

Once ready, remove with a slotted spoon and place on greaseproof paper to cool down, once cool they are ready to use

This can recipe could also be made using Lime slices or even Orange.
